The time of year is here where we get to enjoy good food a plenty! One of our favorite family recipes is Grandmother Pearl Lively’s cornbread. We enjoy this tasty treat by itself, with chili, black eyed peas or incorporated into our great great grandmother’s dressing at Thanksgiving dinner. This recipe is so easy to make that most times it’s the teenager in the family concocting this tasty treat.

Ingredients

There are very few ingredients to create this comfort food favorite and most are usually in your kitchen already.

2 cups cornmeal
½ cup flour
4 tsp baking powder
1 tsp baking soda
2 tsp salt
2 eggs
2 cups buttermilk
2 tablespoons butter

With the ingredients ready, preheat your oven to 400 degrees. If you have a cast iron skillet, now is the time to use it! The cast iron with melted butter adds a phenomenal crispiness to the outside. Place the cast iron skillet with 1 tablespoon of butter in the oven while combining the ingredients.

Dry Ingredients

Combine the dry ingredients of cornmeal, flour baking powder, baking soda and salt. Then add the egg, buttermilk and oil. Mix once again.

Add Wet Ingredients

Add the mixture to the hot skillet with melted butter. Be careful - the skillet is hot!

Hot Skillet

Bake the cornbread for about 20 minutes. The cornbread is ready once poked with a toothpick and comes out clean.

Slice and enjoy!
